Apple Carrot Muffin

1 ½ cup gluten free flour or all-purpose flour
¾ cup flax seed meal
¾ cup gluten free or regular oat bran
1 cup packed brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 ½ cup peeled and shredded carrots
2 apples peeled and shredded
½ cup raisins (can add more)
½ cup chopped nuts (optional)
¾ cup milk
2 eggs
1/3 cup oil
1 tsp. vanilla
1 tsp. xanthum gum (omit if using all-purpose flour)
1 tsp. orange zest
Mix together gluten free flour , flax seed meal, oat bran, brown sugar baking soda, salt, cinnamon and xanthum gum. Stir in apples, carrots , raisins and nuts. Add liquid ingredients, oil, eggs , milk , vanilla and orange zest. Stir until mixture is moistened. Do not over mix. Fill muffin cups ¾ full. Bake at 350 degrees 15- 20 minutes.
